Wuqiao Huasheng Wine Co., Ltd. was established in 2003, with its distillery dating back to 1994. The company focuses on traditional Qingxiang jiutou jiu and retains practices such as grain steaming, solid-state fermentation, winter brewing and blending base spirits of different ages.

Jiutou Jiu: The First Cut of the Still

Jiutou jiu uses the first spirit drawn from distillation. Sorghum, corn and other grains are fermented in solid form. The Qingxiang process uses separate steaming and clean fermentation, without added flavorings or essences.

The new spirit is aged in ceramic jars for at least three to five years, then blended using base spirits of different ages and strengths. The result is a direct, rounded aroma and a smooth palate.

A Living Craft

In 2017, the traditional brewing technique for jiutou jiu was included in Cangzhou's municipal intangible cultural heritage list. Production follows seasonal traditions, including koji making in summer, grain loading in autumn and the first distillation in early winter.
